What you'll need:
1 cup cauliflower- shredded with a cheese grater
1/4 cup sheedded mozzarella
1tbsp smart balance buttery spread
1 tbsp garlic- chopped tiny
Black pepper &/or Italian seasoning
Cook the cauliflower and garlic in a frying pan (coated w/ an olive oil spray) until very lightly browned. Turn off heat and Mix in half or less of the mozzarella. Spray a baking pan with olive oil spray. Spread out the mixture so it can bake evenly. I smooth the top and spread a tablespoon of "butter" and then sprinkle seasoning and the remaining cheese. Bake at 400 for 15 minutes.
I ate this with a morning star mushroom lovers burger and it was amazing. Meat and potatoes- care about your body style:-P
