Breaded Avocado Bites

So I made a new friend names Sandra on the Internet. She just happens to have lost 180lbs, have bright red hair, and is a chef! She gave me a recipe for avocado fries and when I went to make it realized that an egg wash was needed. Now, they actually sell egg substitute for shit like that but I didn't have any so I improvised. I made what I will call "breaded avocado bites"!

What you'll need:

2 ripe avocados

2 tbsp ground flax seed

1tbsp cayenne pepper (divided into 2 halves)

Bread crumbs

Preheat oven to 425 and spray a baking sheet with olive oil spray. Mash up the avocado with 1/2 tbsp cayenne pepper and flax seed. Put bread crumbs in a plate using no more than a table spoon at a time roll the avocado mixture into a ball in your hand. This gets messy. You may want to flour your hands for less mess, but I am a mess so I didn't care. Plop your ball into the bread crumbs and roll it around. Place on the baking sheet and flatten with your fingers or a fork. Repeat until they're all rolled up and sprinkle with remaining cayenne pepper. Bake for 12-15mins depending on desired level of crisp.

I ate them with ketchup mixed with hot sauce. Yea I know, sugar and salt lol at least they're organic :)

Had them with 5 minute vegan chili! Aka soaked black beans, corn, broccoli, and crushes tomato with chili seasoning.
