What You'll Need:
Spinach
Small sweet potato (optional)
Head of cauliflower
Zucchini
Summer squash
Broccoli
Onions
Meatless crumbles
Veggie cheese
Corn
Olive oil
Crushed red pepper
Black pepper
Preheat oven to 425 & spray a pan with with olive oil spray. Cut up zucchini, squash, and broccoli and cook in a frying pan with a little olive oil. Season with black pepper. In another frying pan cook crumbles and onions. Warm corn.
Use a cheese grater to shred the cauliflower. Cook it in a frying pan with olive oil and red pepper. You can also peel, cube and boil a sweet potato and mash that into the cauliflower, mix in about a half a bag of cheese.
NOTE: frozen cauliflower will NOT work, must be fresh!
Put a layer of cauliflower, topped with raw spinach. A layer of veggies, a layer of corn, a layer of crumbles and a layer of cheese. Repeat, skip the next layer of cheese ( don't need it, there's cheese in the cauliflower already!) and top with a layer of cauliflower. Sprinkle with seasoning. Bake for about 25 mins.
