What You'll Need (2 servings):
1/4 cup quinoa(dry)
1/4 cup brown rice
1 cup broccoli
1 cup greenbeans
half an onion, diced
Teese, vegan cheese or another alternative
daiya pepperjack cheese
3tbsp nutritional yeast
cook rice & quinoa each with 1/2 cup of water, but separately (they take diff amount of times, use manufacturers directions). preheat oven to 350 and spray a pan with olive oil spray.
drain rice & quinoa and mix with vegetables, nutritional yeast, and teese. pour into pan and top with daiya. Bake covered at 350 degrees until the veggies are cooked (25-35 minutes).
