i had bought quinoa (pronounced KEEN-WAH) last week because i see tons of recipes incliding it. its a grain that is high in fiber and protein. Because i didnt have all the ingredients needed for the recipes i had- i made one of my own! I am proud to say i nailed it. this was SO good!! if you like spice- this is for you!
What you'll need:
1/4 cup quinoa
1 jalapeno pepper
1/4 white onion
1/2 can Hot rotel (or diced tomatoes if you cant handle the heat)
Thoroughly rinse quinoa with a fine strainer. bring 1/2 cup water to a boil & add quinoa. after about 2 mins lower the temp to a simmer for an additional 15mins. youll know when quinoa is done because itll become clear & a little root looking thing will sprout from it.
meanwhile- slice jalapeno & dice onions. Cook on medium in a frying pan (coated with olive oil spray). when onions begin to turn clear add rotel & cooked quinoa. cover and allow to simmer for about 10 mins.
while i was cooking the quinoa i put a cut up wheat Flat Out wrap and baked it at 400degrees.
makes one delicious serving!
