Another accidental recipe! I wanted to make tabouli (which is spelled like 14
Diff ways, might i add) so I googled a few recipes. Being an amateur, I had to ask which herb was fresh parsley at the farmers market. As soon as I cut it i could smell it- CILANTRO.
I used to hate cilantro. But it's one of those foods i force myself to eat because its in so much Mexican food, and I love Mexican. So I made the tabouli anyway- with cilantro and lime, and called it Mexican lol. It was delicious with salsa and avocado! I'm surprised how much I liked it with so much cilantro. However, I can't wait to make it the correct way lol
What you'll need:
4 tomatoes
1 bunch cilantro
1/2 red onion
Juice of 1 lemon
Juice of 1 lime
1/2 cup bulgar wheat
Pinch of salt
Boil about a cup of water. Place bulgar in a dish and cover with boiling water. Allow to sit while you chop your veggies small. Take your time- it tastes so much better when cut with care. I put mine thru the food processor for like 3 seconds after chopping- but be careful- it's easy to get moosh and u don't want that.
Test bulgar to make sure it's softened &then strain. Combine bulgar & vegetables, squeeze lemon over the top and mix in a pinch of salt! Serve cold. Delish!
