Before my aunt went low-carb she recommended these awesome wonton wraps to me. They're low cal and low fat but bit low carb. If you're skipping carbs this recipe is not for you. If you're playing by my rules than this ( and any other recipe containing a "bread") is a great lunch- but shouldn't be eaten late in the day. The earlier you eat your carbs the more likely you burn them off during the day.
What youll need for 1 serving:
8 wonton wraps
2 cherry tomatoes
5 mushrooms
1 slice onion
Pepper to taste
Chop up everything but the wraps real tiny or run them thru a food processor. Lay out the wraps and evenly distribute the filling. Sprinkle w pepper. Fold the wontons- I fold in the sides and then the top and bottom and give it a little stab w my nail to make it stick. There are directions on how to properly fold a wonton on the package if you're interested. Spray a pan w olive oil or another natural non-stick Agent and bake for 15mins at 350.
If you make more than one serving they're actually really good cold or microwaved. First day, fresh out of the oven and crunchy is my fav though.
