What Youll Need:
1 small watermelon
2 tubs vegan sour cream
1/4 cup coconut flour
1tbsp agave nectar
assorted fruit for decoration
Cut the ends of the watermelon off so its flat on top and bottom. then cut off the sides in small peices. i am not a chef of any kind so i have no idea how to describe this other than cut off green and white part so its shaped like a cake lol
in a food processor, combine cream cheese, coconut flour, and agave. Pat the watermelon dry with a paper towel and apply a nice thick layer of frosting. cut up decorative fruit & place any way youd like. cut like a cake, keep cold!
the coconut flour is only used as a thickener to keep the frosting from running off the cake. if you want a sugar high or a more kid-like flavor your could use powdered sugar instead.
