Fresh Cucumber Salad

What you'll need:
1 cucumber
Half onion
1 red pepper
2 stalks celery
1 carrot
1 can natural hunts diced tomatos
2tbsp olive oil
2tbsp vingegar
Dash crushed red pepper

Cut veggies all small & put in a dish. drain the tomato juice & mix the tomato in. Drizzle with crushed pepper & oil & vinegar. Refrigerate atleast an hour before serving.

3 Ingredient Taco Salad

This is the simplest "recipe" of all time but I eat this SO much because its delicious and like 120 calories!

What you'll need:
1cup romaine lettuce- chopped
2/3 cup veggie crumbles
1/2 cup salsa

Cook crumbles in a frying pan with olive oil spray until browned. Turn off the heat and add salsa. Mix well. Pour over romaine, mix & enjoy!

You could put the salsa on the lettuce cold and just add the Hott crumbles but I think the salsa cools down the crumbles and I don't like them like warm. The hot salsa doesn't make the lettuce soggy as long as you're eAting it right after you prepare it.

Spinach, Raisin, & Cashew Salad

What you'll need:

2 handfuls spinach
1/4 cup raw cashews
2 tbsp raisins
dressing of your choice. i used:
2 tbsp bolthouse farms honey mustard dressing (not vegan)

you know what to do. :-P

Quick Shrimp and Feta Salad

What you'll need:
8-10 Shrimp
Romaine lettuce
Onion-1 slice
1/8-1/4cup feta cheese
Olive oil and vinegar
Dash of mrs. Dash original flavor

Cook the shrimp in a frying pan w olive oil spray or on the grill. Season w Mrs. Dash. I don't have to tell you how to throw the salad together :)

Serve immediately!

Cucumber and onion salad
What you'll need:
1 cucumber- peeled and sliced
1 red onion- peeled and sliced
1/2 cup apple cider vinegar
1/2 cup water
2 packets stevia(or another sweetener)
Black pepper

Combine ingredients in a container with a tightly sealed lid. Let it marinade for atleast 4 hours- I flip it over after 2.

I've eaten it up to 5 days later and veggies are still crunchy. Tastes even better the longer it soaks.

What you need:
fresh spinach
onion
1 tbsp sliced almonds
1 tbsp dried cranberries
1 tbsp bolthouse farms honey mustard yogurt dressing

I found this fabulous recipe on my aunt's pinterest:

As I often do, I edited it to fit the ingredients I happened to have as well a my tastes.

-I used MorningStar meatless Crumbles instead of ground meat and cooked it with jalapeno powder and tomatoes.
-I dont like sour cream, so I didn't use it.
-I only scooped out half on the avocado(see chefs note at bottom of recipe)
-I used extra hot salsa & red onion

I had extra "meat" left over so I made a little salad to go with the tacos. It was just romaine, salsa, and crumbles. The while I was eating it occured to me you dont eat the taco shell anyway, so I emptied it out and mixed it all together and made a taco salad that was awesome. The avocado shell "display" is nice to look at, but in my opinion the salad is better to eat.
