What you'll need:
4 small sweet peppers
1/4 cup quinoa
3/4 cup water
1slice onion- chopped
2 jalapeños- chopped
3tbsp salsa
3tbsp ground flax
1/8cup daiya cheese
Bring water, quinoa, onion & jalapeño to a boil for 5 minutes. Drop down to a simmer until soft or by the directions on the package. Add salsa & flax.
Cut peppers into halves & remove insides. Lay on a baking sheet coated with olive oil spray. Fill each pepper with stuffing. Sprinkle with daiya cheese.
Bake at 350 for 25 minutes. Enjoy!
