Black Eye Peas & Veggie Soup

What you'll need:
1 small zuchinni
1/2 medium onion
1 cup black eye peas- dry
1 can crushed tomatoes, no salt added
1 cup vegetable broth
2 stalks celery, chopped
2 cloves garlic, diced
1 red bell pepper
.5cup water
1 small sweet potato

Chop up all the ingredients and put it in the crockpot! I let is cook on high for 5 hours.

This makes 3 pretty good size servings estimated to have only 86 calories in each.

Warm Spinach Dip

What you'll need:
1/4 cup part skim mozzarella cheese
1/2 cup low fat or fat free greek yogurt
1 slice onion- diced
3/4 cup spinach, chopped
1tbsp garlic- diced
1tsp crushed red pepper
black pepper to taste

Mix ingredients in a bowl. Turn crockpot on high and spray with olive oil spray. distribute dip evenly. Let cook for an hour. Serve warm with pita bread or chips.

You could also bake it in the oven but im loving the crockpot lately lol

Makes 2 servings.

Spicy Veggie & Crumble Soup

This is one of my lazy recipes that I just leave to cook while I get other things done. I use canned and frozen veggies in it because I make it when I dont have time to cut up all kinds of vegetables. It is surprisingly delicious even though its not very fancy lol

What you will need:
2/3 cup morning star meatless crumbles
1 can rotel (i like HOT)
1 cup asparagus stirfry frozen veggies (great value brand is what I use)
chili powder to taste
garlic powder to taste

combine ingredients in a frying pan on medium heat. cover and allow to cook, stirring occasionally. I usually leave it on for about 20-30 minutes. You could serve over brown rice but its great as is!
