What you'll need:
1 small zuchinni
1/2 medium onion
1 cup black eye peas- dry
1 can crushed tomatoes, no salt added
1 cup vegetable broth
2 stalks celery, chopped
2 cloves garlic, diced
1 red bell pepper
.5cup water
1 small sweet potato
Chop up all the ingredients and put it in the crockpot! I let is cook on high for 5 hours.
This makes 3 pretty good size servings estimated to have only 86 calories in each.
