Ok so I made this handy dandy little lasagna recipe myself. So you can expect the recipe to not sound like a chef, at all lol.
What you will need(for 2 servings)
2 small or 1 large zuchinni
tomato sauce
Boca or MorningStar meatless crumbles
mozzarella cheese
onion
bell pepper
Spray a frying pan with oil spray. Cut dice pepper and onions up and cook them with the crumbles until crumbles are no longer frozen and a little browned.
Slice zucchini lengthwise. I recommend using a slicer so you get nice thin uniform slices. Spray a baking pan with olive oil spray and put a layer of zucchini. Cut zucchini as needed to fit the pan's shape. Put a layer of tomato sauce. A layer of crumbles. A layer of cheese. Repeat until youre out of ingredients. I had 3 layers I believe.
Cover with foil and bake at 350 about 40 minutes. It is a little messy when serving, because zucchini is not as pliable as noodles and I dont pile on the cheese it does not stick together picture perfectly, but tastes great.
I didnt measure any of my ingredients, but remember to use them smart. Each layer doesnt need more than a few table spoons of sauce and cheese to taste good. The more you pile on the more calories. Layer sparingly and you may be surprised how little fat and sugar it needs to taste good. As the zucchini cooks the foil will trap the moisture in the dish and it will be a lot more saucy than you anticipated (I didnt use more than 1/4 cup sauce and look how saucy it came out)
